Red earth, partially clayey & sandy ground with bole underlayers – originating from the decomposition of rich iron hydroxide limestone and limestone.

Cultivation System

Espalier, Guyot, with a per hectare density of 5,600 plants

Per hectare production

6-7 tons of grapes, with a yield of 60-65% wine

Vinification

Grapes picked and temperatures reduced immediately to 8- 10°C, 12 hour micro-maceration, soft pressing, decantation statics and fermentation at controlled temperatures of 16-18°C

Maturation

After fermentation, separation of crude sediment, leaving to mature on the final sediment for 3 months, after which it is stabilised and bottled. Bottle maturation for 30-40 days.

Colour

Staw- yellow with flecks of green

Fragrance

Fruit, elegant and persistent 

Taste

Dry, fresh, intense, typical of land of trulli

As an accompaniment to

Risotto, fish based dishes, soft cheese and white meat.

Alcohol

12% - 12.5% Vol.

Served at a temperature of

12 – 14°C
